Does Chili Crisp Need to Be Refrigerated?

The back of a Super Magic Taste Chili Crisp jar, showing the nutrition facts, ingredients and allergens

Usually not. Most store-bought chili crisp, ours included, is shelf stable, so the jar is fine in the cupboard before and after you open it. Check your label, because a few brands do ask you to refrigerate after opening. The fridge keeps any jar fresher for longer, and homemade chili crisp is a different story: that one lives in the fridge.

Does chili crisp go bad?

Slowly. Chili crisp is mostly oil plus dried and fried things, so there is very little water in it for anything to grow in. What happens instead is that the oil goes stale over a long time. Light, heat and air speed that up.

Signs a jar is past it:

  • It smells off. Stale oil smells like old crayons or paint.
  • There is mould on the surface or under the lid. Throw it out.
  • The crunchy bits have gone soft and soggy. Not dangerous, just sad.

If in doubt, throw it out.

How long does it last?

Ours has a two year shelf life unopened. The best before date is on the jar. In practice, an open jar of chili crisp is usually finished long before it goes stale. If yours has been at the back of the cupboard for a long time, smell it before you use it.

Cupboard or fridge?

Cupboard is fine. Keep it away from the stove and out of the sun, because heat and light are what make oil go stale.

Fridge keeps it fresher for longer, and we think it tastes even better cold and extra crunchy. Some oils turn cloudy or thick in the fridge. That is normal. Leave the jar out for a few minutes and stir.

How to keep it crunchy

  • Use a clean, dry spoon. Water and crumbs are what spoil a jar.
  • Close the lid tight.
  • Stir from the bottom. The good crunchy stuff sinks.

Homemade chili crisp is different

A homemade batch was not made the way a shelf stable product is, so keep it in the fridge and follow the storage advice in the recipe you used.

Stocking it in a shop?
