Instructions:
- Place the cucumbers on a cutting board and gently smash them using a rolling pin or the flat side of a knife. Cut the smashed cucumbers into bite-sized pieces.
- In a bowl, sprinkle the salt over the cucumber pieces and let them sit for about 20 minutes to draw out excess moisture.
- Rinse the cucumber pieces under cold water to remove the salt. Pat them dry with a paper towel.
- In a separate bowl, mix together the rice vinegar, sugar, sesame oil, Super Magic Taste and chili flakes (if using).
- Add the cucumber pieces to the vinegar mixture and toss to coat them evenly, let it marinate for 10 mins.
