- In a medium-sized pot, bring 2 cups of water to a boil. Add a pinch of salt and slowly whisk in 1/2 cup of grits. Lower the heat to a simmer and cook, stirring occasionally, for 20-25 minutes or until the grits are tender and have absorbed most of the liquid.**
- While the grits are cooking, cook the bacon in a separate skillet over medium-high heat until crispy, about 5-7 minutes. Remove the bacon with a slotted spoon and set it aside.
